Steven Christopher's Chia Seed Pudding | 360° LOVE FOODS ™

Ingredients
1-2 handfuls of fresh mixed berries
1/2 cup chia seeds
2 cups coconut (or other fairly thick plant) milk
Few dashes of cinnamon & nutmeg
Splash of vanilla
1 tbsp of maple syrup
2 tbsps of date syrup (save for topping)
Directions
Add milk to bowl.
Add spices, maple syrup and vanilla, then whisk.
Add chia seeds, keep whisking until everything is well mixed. You’ll see it start to slightly thicken fairly quickly.
Let it sit in the fridge overnight (or at least 1-2 hrs). Overnight is best, so it really gets to thicken into a good pudding.
Remove from fridge, scoop into a cereal sized bowl, add a handful or two of fresh mixed fruit, then stir it into pudding mix.
Top with the granola of your choice. I used Love Crunch; it has dried strawberries and dark chocolate.
Then, drizzle your date syrup over the granola.
Enjoy!! 😁
*Store the leftover pudding in a tightly sealed tupperware to enjoy later!
